Bring a guest favorite from our Galena bed and breakfast to your own breakfast table.

If you've stayed with us at High Street Inn, there's a good chance you've started your morning with a bowl of our whipped Greek yogurt. Served with fresh berries, homemade granola, and crisp apples, it's become one of the most requested dishes at our breakfast table.

And while we'd love to take all the credit, the secret is surprisingly simple: good Greek yogurt, a little heavy cream, a touch of maple syrup, and a bit of patience with the mixer. The result is something wonderfully light and creamy, almost like a mousse, but perfectly at home on the breakfast table.

We've had enough guests ask for the recipe that we decided it was time to share. Whether you're recreating a favorite breakfast from your stay in Galena or discovering our little Inn for the first time, here's how to bring a taste of High Street Inn into your own kitchen.

High Street Inn's Whipped Greek Yogurt

Serves 4 | Easy to prepare

Light, creamy, and just sweet enough, this whipped Greek yogurt makes an elegant breakfast starter.

Ingredients

For the whipped yogurt:

  • 1¼ cups thick Greek yogurt (300 g)
  • ¼ cup heavy whipping cream (60 g)
  • 1 tablespoon + 1 teaspoon pure maple syrup (18 g)
  • ½ teaspoon vanilla extract
  • Pinch of kosher salt

For serving:

  • Fresh seasonal berries
  • Granola, preferably homemade
  • 1 crisp apple, julienned

Instructions

1. Combine the ingredients.

In the bowl of a stand mixer fitted with the whisk attachment, or in a large mixing bowl using an electric hand mixer, combine the Greek yogurt, whipping cream, maple syrup, vanilla extract, and salt.

2. Whip until light and airy.

Mix on low speed for 1 minute, just until the ingredients are fully incorporated.

Increase the mixer to high speed and whip for 12 to 15 minutes, until the mixture becomes noticeably lighter in color and develops a silky, airy texture reminiscent of a light mousse.

3. Add the finishing touches.

Divide the whipped yogurt among four bowls. Arrange fresh berries over the yogurt, then sprinkle generously with granola. Finish with a small handful of julienned apples for freshness and crunch.

4. Enjoy!

Serve immediately, preferably with a good cup of coffee and absolutely no reason to rush.

A Little Tip From Our Kitchen

For the best texture, choose a thick, strained Greek yogurt with minimal whey. The drier the yogurt, the lighter and fluffier the finished result will be.

We use FAGE Greek yogurt because of its dense, creamy consistency, but any similarly thick variety will work well. If your yogurt contains more moisture, the mixture may not whip as high or hold its texture as long.

And one final tip: Make sure both the yogurt and cream are thoroughly chilled before whipping. It makes a noticeable difference in achieving that wonderfully light, stable texture.

Breakfast Is Part of the Experience

One of our favorite parts of running High Street Inn is gathering everyone around the breakfast table each morning. It's where stories are shared, recommendations are exchanged, and guests occasionally linger over one more cup of coffee before heading out to explore Galena.

We prepare breakfast fresh each morning, with a rotating menu of sweet and savory dishes. And while the main course changes from day to day, our whipped Greek yogurt has earned a regular place at the table.

We hope this recipe brings back a few happy memories of your stay, or gives you one more reason to come visit.

Until then, enjoy every moment, and every spoonful.
